Cooked Brown Rice - 0.5 cup Sunflower Oil - 0.5 tbspFresh Mushroom slices - 0.5 cupYellow Corn Kernels - 0.25 cupGreen and Red bell pepper Strips - 0.25 cupRaw Onions - 0.5 cup (sliced)Fat Free Refried Beans - 0.5 cupSalad lettuce - 1 cup (chopped)Tomato - 0.25 cup (chopped)Avocado - 0.25 fruit (chopped)Jalapeno - 0.5 (thin slices)Pineapple Salsa - 2 tbsp
Heat the oil in a pan and add Onion, Bell pepper, Mushrooms and saute well. Then add cooked brown rice and cook for another 5 mins and keep aside.
Arrange the lettuce in the bottom of a bowl. Add the following ingredients on top - Refried beans, Rice, Tomato, Jalapeno, Salsa and top it off with avocado slices. This recipe is for one serving. Enjoy!
