Thai Carrot & Ginger Soup

Ingredients
3 carrots1 large onion4 cloves garlic1 stalk lemongrass1 qt. vegetable stock2 Tbs. ginger2 Tbs. lemon juice1.5 cup light coconut milkHandful fresh cilantro
Directions
Rough chop carrot and onion and place in a pot with garlic, vegetable stock, and lemongrass (pound lemongrass stalk to release oils before adding to pot). Cook until vegetables are tender, about 45 minutes. Remove lemongrass from pot and puree carrot mixture in a blender with coconut milk. Pour soup back into pot and stir in ginger, lemon juice, and cilantro.
