Mexican Chicken Rice and Black Beans

Ingredients
2 can black beans3 boneless, skinless chicken breastsPampered Chef Himalayan Salt and Peppercorn MedleyPampered Chef Southwest Seasoning2 jar Salsa (your heat!, roughly 20 oz)8 oz. cream cheese4 cups Minute Rice2 cup shredded cheddar or Mexican blend cheese
Directions
Place 2 cans black beans (drained, not rinsed) in bottom of Baker. Top with 3 boneless chicken breasts. Season well with Pampered Chef seasonings. Cover generously with Salsa of your choice.

Cover Baker and microwave 18 – 25 minutes depending on thickness of chicken breasts (check thickest part for “done-ness”!) Prepare rice while cooking.

Place rice over PC Dots Oval Platter. Top with cooked chicken breasts.

Place 8 oz. cream cheese chunks in bottom of Baker with bean salsa/mixture and stir until it melts together to form a creamy sauce. Ladle over top of chicken breasts, and add some more salsa, if desired. (Up to this point, this is a Weight Watcher Recipe!)

Shred some Cheese (now leaving Weight Watchers!) and sprinkle with some chopped Cilantro if desired.
