Sausage and Artichokes on Penne Pasta

Ingredients
Penne pasta 3 Tbsp extra-virgin olive oil2 cloves garlic, minced8 oz Italian sausage, peeled and crumbled10 artichoke hearts preserved in olive oil, drained and choppedhandful of fresh flat-leafed parsley, dicedsalt & pepper to tastegrated Parmesan cheese (optional & not included in calorie count)
Directions
Cook pasta according to directions, strain. While pasta is cooking, heat olive oil in large pan, add garlic and sausage. Cook until sausage is nicely browned and cooked through. Add artichoke hearts, salt & pepper, and parsley. Cook an additional 2-3 minutes, and remove from heat. Pour into pasta and stir. Serve with grated Parmesan cheese.
