Lentil w/Bacon and Veggies

Ingredients
2 strips bacon1 large onion1 cup bell or poblano pepper1 cup carrots1-lb pkg of lentils1 14-oz can of chicken broth5 cups water1 tsp rosemary crushed1 tsp garlic powder
Directions
Chop bacon and cook in sauce pan.
Leave 3 tsp of bacon grease to saute vegetables
Add vegetables (except tomato) and saute till carrots are almost tender.
Add to lentils that have been rinsed.
Add water and broth.
Cook for about 1 hour.
Add tomato and heat till tomato is heated through.
Makes about 12 1-cup servings

    I left out the tomato, and didn't have bell pepper... but I added zuchini. I used more bacon and left it in while I sauted the veggies. I also used fresh rosemary and garlic, added some sage and pepper to taste. Overall it was very good! :) A lot like split pea soup... - 12/17/08

    This was excellent. The lentils, bacon, carrots and poblano peppers combined for a very satisfyng meal. Plenty of leftovers for quick yummy meals too. - 7/6/07
