Salmon Cakes

Ingredients
15 oz. canned salmon3/4 cup bread crumbs1/4 cup onion, chopped1/2 Tbsp. lemon juice1 Tbsp. Old Bay Seasoning
Directions
Mix all ingredients together and form cakes. Pan fry 2 to 3 minutes on each side. Makes 6 cakes.

    these were dry and hard to shape to patties, so I added two egg whites to get them to bind. they were sort of bland, too. With a little work they could be really good. I will add some sauteed onion, garlic, and bell pepper for moisture and flavor. - 1/23/11
