15 Minute Low Fat Refried Beans

Ingredients
2 cans pinto beans1/2 medium onion, chopped1 t cumin2 t dried cilantro1 t salt4 garlic cloves, pressed or minced3/4 C water or vegetable broth
Directions
Pour olive oil into pan, add onion and cook for 3-4 minutes. Add cumin, cilantro and garlic. Stir and cook for 1 minute. While onions are cooking, drain beans and pour into a large bowl. Mash the beans with a pastry blender or potato masher. Add to onions and spices. Add salt and water or broth. Stir well and simmer for 5-8 minutes stirring frequently to prevent sticking. Beans are done when they are thick and bubbly.

Makes 6 half cup servings.
