Geraine's Tofu (Not Vegan Style) Eggless Salad

Ingredients
1 14 oz Extra Firm Tofu3 Tablespoons Reduced Fat Mayonnaise3 Teaspoons Yellow or Dijon Mustard1 Tablespoon Sweet Pickle Relish2 Tablespoons finely chopped onion1 Teaspoon dried Dill Weed1/2 Teaspoon ground Cumin
Directions
Firmly press extra water from Tofu. Crumble into mixing bowl, breaking into small pieces. Add all remaining ingredients (and anything else that you may like in your egg salad). Mix everything together (add additional Mayonnaise if you like your salad wetter) Salt and pepper to taste (not included in nutritional information).

Makes Approximately 8 servings (2 Rounded Tablespoons per serving)
