FLAX SEED MORNING GLORY MUFFINS

1 C Fiber One Cereal Ground3/4 C 99% Fat Free Milk1/4 C Sunflower Seeds1/2 C Flax Seeds Ground or Flax Seed Meal1/4 C Splenda Brown Sugar Blend1/2 C Splenda Sugar Substitute1/4 C Flake Coconut1/2 C Applesauce Unsweetened1/2 C Egg Substitute1/2 C Shredded Carrot3/4 C Chopped Apple or 1/2 C Blueberries1 C White Flour1 T Canola Oil1 tsp Vanilla2 tsp Ground Cinnamon1/2 tsp Salt3 tsp Baking Powder3 T Absolutely Pure Whey (heaping)
Place the ground Fiber One in a large bowl and add the milk. Allow to stand about 5 minutes or until the milk is absorbed.
Add the rest of the ingredients and mix well. It will be thick.
Spray 12 muffin pan with non-stick spray. Place batter evenly into the pan and bake at 375 degrees for 20 - 25 minutes or until toothpick inserted into middle of muffin comes out clean.
