Bruschetta

Ingredients
6 tomatoes2 cloves garlic, minced1 tbsp olive oil1 tbsp balsamic vinegar6 to 8 basil leave, choppedsalt & pepper to taste1 french loaf1/4 cup olive oil1 cup mozzarella, shredded
Directions
Chop tomatoes finely. Combine tomatoes, garlic, 1 tbsp olive oil, vinegar in a bowl & mix. Add the chopped basil. Add salt and pepper to taste.

Slice bread in 1/4 inch thick slices. Coat one side of each slice with olive oil using a pastry brush. Place on a cooking sheet, olive oil side down. Toast for a few minutes until lightly golden brown.

Flip bread slices over, top with tomato mixture & shredded mozzarella cheese. Put back in over long enough to melt the cheese. Remove to serving platter.
