Beef and Tomato soup

500g Beef thinly sliced in bite size 2 chopped and skinned tomatoes salt and pepper to taste1 tablespoon dry sherry 1 tablespoon soy sauce 2 teaspoons corn flour 1 tablespoon oil 2 cups chicken stock 1 tablespoon chopped spring onions 2 eggs beaten
Mix together the sherry, soy sauce, pepper and corn flour. Marinade the meat for 30 min.
In the meantime cook tomatoes until mushy.
Drain the meat until dry and heat the oil in a wok or a pan, add the meat and stir-fry until it changes colour.
Add the stock, marinade and taste for salt contents, add if necessary and bring to the boil.
Add tomatoe and reduce heat and cook until meat is tender, slowly pour in the beaten egg, without stirring, so it resembles clouds flouting on top.
Garnish with spring onion.
Serve hot.
