Tamara's Cheescake Pancakes - with Strawberries

Ingredients
1 egg - split the yolk and egg white. Whip the egg white until stiff peaks.Put the yolk into the bowl with the following ingrediants.1/2 cup cottage cheese1 tsp vanilla extract1/2 cup milkmix all together.Add in the flowing ingrediants:1/2 cup All Purpose Flour1/2 cup Whole Wheat Flour1 tsp Baking Powder1/4 tsp salt1tsp lemon zestMix all ingrediants together.Fold in the egg whites.
Directions
Heat your skillet or flat iron and make the pancakes.

Makes 9-10 1/4 cups of batter pancakes. 3 pancakes for 3 people.

Serve pipping hot with real maple syrup or fresh/frozen sliced strawberries. VERY YUMMY!

    I don't like cooked strawberries - at least I didn't in the past. I think I will try this variation.

    This was very yummy...I did not use the lemon zest though...not really a big fan of it...I also cooked the strawberries in a simple syrup(made with splenda) and put some of the hot strawberry sauce on top...loved it and I usually don't eat pancakes! - 6/5/10
