1 tsp olive oil1 medium onion sliced2 six inch zucchini or other summer squash, sliced2 medium tomatos cubed1 cup shredded Colby-Jack cheese
Heat olive oil in pot.
Put in sliced onion
Cook onion in olive oil until slightly browned.
Put in sliced squash and cubed tomatos
Cover and simmer until squash is cooked.
Turn heat to low.
Put in Cheese, cover, heat until cheese is melted
