1 Onion, finely chopped1 stalk Celery, finely chopped1 cup Vegetable stock3 tsp Cornflour, to thicken if necessary400 g Chicken Breast50 g frozen Peas50 g carrot finely diced (or mushrooms)1/2 Red Peppers. finely diced100 ml Cream Single Alternative Alpro SoyaRocket, parsley or sage.
Simmer onion and celery in vegetable stock until soft (about 10 mins). Remove and liquidise. If the liquid is a bit think, thicken with cornflour slaked in a little water.
Add chicken breast, peas and red pepper. Simmer for 8-10 minutes, until chicken is cooked through, but still tender.
Stir in soya cream and rocket and heat through gently.
