Oddo's Asian Spring Rolls

1 Skinless Chicken Breast2 tbsp. Kikkoman Thai Style Peanut Sauce (I've tried others, this is the best tasting one)1 tbsp. toasted sesame seeds (adjust this to your liking, u may use less)1 raw carrot1/2 of 1 red pepper6 cilantro sprigs6 asparagus spears18 baby spinach leaves1/2 cup uncooked white rice6 Asian Rice Wrappers
*Makes 3 servings - 2 rolls per serving; May be served cold
1.) Cook 1/2 cup of white rice (or buy a small white rice from your local chinese restaurant).
2.) While rice is cooking, use your potato peeler to slice 1 carrot into shreds.
3.) Slice half of 1 red pepper into thin strips.
4.) Steam asparagus until tender.
5.) Slice the chicken breast into strips.
6.) Saute chicken on med. high heat with the Peanut Sauce & Toasted Sesame Seeds 5-10 minutes until chicken is no longer pink inside.
7.) Take a rice wrap and moisten with water on both sides.
8.) Place 3 spinach leaves on wrap.
9.) Put the remaining ingredients into the wrap (carrots, chicken, red pepper, 1 cilantro sprig, 1 piece of asparagus, & 1 tablespoon of cooked white rice).
10.) Fold in the sides of wrap & then roll the wrap.
11.) Enjoy!
