Chickpea Curry

Ingredients
2 cans chickpeas, undrained1 T olive oil1 t cumin1/4 t cardamom1/4 t coriander1/4 t cinnamon1/2 t ginger1/8 t cayenne pepper (optional)1/2 C chopped bell pepper1/2 t salt (if desired)1/4 C raisins1 10 oz. package frozen spinach
Directions
Heat oil. Sizzle cumin for 1 minute. Add all ingredients EXCEPT salt, spinach and raisins. Cook for 10 minutes. Add spinach, raisins and salt (if desired). Cook until raisins are plump and sauce is reduced to desired consistency.

Serving suggestion: Serve over brown rice.
