To Die For Chocolate Mousse

6 eggs250 grams Quality Dark Chocolate (60% - 85% cocoa)

Note: Do not substitute milk chocolate or unsweetened baking chocolate or the chocolate will not combine correctly.

This quick recipe makes a mousse so delicious that your guests won't believe it is so simple. Start by setting up a double boiler: boil water in a large pot or saucepan, and find another pot that you can place in the water (without touching the bottom of the pot of boiling water). Once the water is boiling, put the smaller pot in the water and add the chocolate bar broken into pieces. Stir the chocolate occasionally until it is completely melted.

While the chocolate is melting, separate the eggs, with the yolks in a small bowl and the whites in a bowl large enough to beat them. Beat the egg whites until they become frothy but not stiff.

Once the chocolate has melted, remove it from the stove and mix in the egg yolks one or two at a time until they are completely mixed with the chocolate. Once you have added the yolks, add the whites to the mixture slowly, adding two to four tablespoons of froth at a time until you have mixed in all of the egg whites. The mixture should lighten in color and become thinner as you add the whites.

Pour the mixture into small glasses or glass dessert bowls and put them in the fridge to chill for at least two hours, if not overnight.

Makes eight 2 oz. servings. (That may not seem like a lot, but this recipe is very rich, and most people can't handle more than a few spoonfuls.)
