Spinach and Mushroom Fritatta

2 cups spinach1/2 cup mushrooms 2 tsp minced garlic1 tsp dried basil1 cup Egg Beaters1/2 tsp italian seasoning1/2 tsp salt1 tsp black pepper1/4 cup corn meal1/2 cup Italian Four Cheese Blend (provolone, parmesan, mozzarella, and romano cheese)1 tbsp fat free feta cheese
1. sautee garlic, basil, spinach, and mushrooms
2. in a separate bowl combine egg beaters, italian seasoning, salt, pepper, corn meal, fat free feta cheese, and Italian 4 cheese. mix well.
3. pour into pre-sprayed 2 qt pan. stir in sauteed vegetables
4. bake at 375 for approximately 20 minutes or until a toothpick comes out clean.
