Lemon Orange Tofu

Ingredients
3 tablespoons olive oil, divided1/2 block extra firm tofu, drained and pressed2 garlic cloves, minced2 green onions, chopped1/4 cup and 2 tablespoons water1 tablespoon orange juice1 tablespoon lemon juice1 1/2 tablespoons vinegar2 tablespoons soy sauce1/4 cup packed brown sugar1/2 teaspoon red pepper flakes, or adjusted to your taste2 teaspoons cornstarch1 tablespoon water hot cooked ricebroccoli1/2 red pepper
Directions
Cut tofu into small bite sized peices and coat with cornstarch. Fry in fryingpan with olive oil until crisp.

Sauté green onion, garlic and red pepper in pan untill mostly cooked. Add water, soy sauce, lemon juice, orange juice, brown sugar and red pepper flakes. (Add ginger at this point if desired and/or orange peel). Stir together.
Add broccoli and then add 2 table spoons of cornstartch mixed with water to thicken sauce.
Allow to simmer untill broccoli is at desired tenderness, I prefer it crispy so I usually only let it simmer for 10 mins.

Servce over cooked rice. (Jasmine, brown or white)
