Ham Mushroom Artichoke Fritatta

Ingredients
1 T. Olive Oil10 egg whites2 whole eggs6 oz. diced ham1/2 c. diced onion1 c. sliced mushrooms1 can of artichoke hearts drained1/2 cup favorite cheese (full fat)
Directions
Makes 6 servings

Cook ham, artichokes, mushrooms, onions in olive oil in an oven safe skillet. Meanwhile whip egg whites and whole eggs to a light foamy consistency. When veggies are tender add egg mixture. Sprinkle cheese over the top. Bake in a 400 degree oven for 15-20 minutes.
