Chicken w/Brown Amber Rice

1 cup brown rice1 cup orange juice1-1/3 cup chicken broth1/4 cup chives6 chicken breast halves (24 oz)
Preheat oven to 375 F. Adjust rack to middle position. Spray casserole dish w/Pam. Place rice in bottom of pan.
Bring juice, and broth to boil, covered, in medium saucepan over high heat. Once boiling, immediately stir in chives and pour over rice.
Season chicken as desired and place on top of rice.
Cover baking dish tightly with doubled layer of foil. Bake 1 hour, until tender.
Remove baking dish from oven and uncover. Fluff rice with dinner fork, then cover dish with clean kitchen towel; let stand 5 minutes.
Uncover and let stand 5 minutes longer; serve immediately.
