Cajun chicken cutlets with Spanish orange salad

Ingredients
12 skinless chicken breast tnedersjuice of 1 lime5 tbsp flour1 tbsp Cajun seasoning1 tsp cayenne pepper1/2 tsp saltFor the salad2 orangesspinach and arugula greens1 tbsp olive oil1 small red onion, thinly sliced
Directions
Heat oven to 425F/220C.
Toss chicken in lime juice to coat.
Place flour, Cajun seasoning, cayenne pepper and salt into a large bowl and mix well.
Sprinkle flour mixture onto a plate.
Lift chicken pieces out of the lime juice and press each side into the seasoned flour to coat evenly.
Place chicken on a wire rack and sit the rack on a baking sheet.
Bake chicken for 20-25 mins.
Peel oranges, discarding white pith & cut into segments over a bowl to catch juices.
Toss orange segments with the orange juice, salad greens, oil and onion and divide between 4 plates.
Pile crispy Cajun chicken on top and serve.
