Chicken and Veggie Egg WhiteFrittata

Ingredients
2 cups thin sliced zucchini1 cup chopped broccoli1 cup chopped onion1cup chopped red bell pepper1 teaspoon black pepper1 teaspoon salt1 teaspoon chili powder1teaspoon cayenne pepper1 chopped clove garlic2 tablespoons olive oil12 egg whites1 lb chopped chicken breast
Directions
-Chop all the vegetables and place in a large mixing bowl
-Add in spices and olive oil
-toss
-Put in large non stick skillet
-add a dash of water and cover immediately to steam the broccoli
-cook covered for 5 minutes stirring occasionally
-slice the chicken into small strips while this is cooking
-when the broccoli starts to soften, add the chicken
-cook uncovered for another 3 minutes stirring constantly.
-when the chicken is cooked, drain off excess liquid
-add the egg whites and cover immediately on low flame
-let cook for 5 minutes
-put on broiler and put pan on top rack in oven for 3 minutes
-let cool and slice
