Parmesan Zucchini

Ingredients
1 tsp extra virgin olive oil1lb zucchini, slices 1/4 inch thick1/4 cup finely shredded Parmesan cheesesalt & pepper to taste
Directions
Heat 1tsp extra virgin olive oil in a medium non-stick skillet. Add 1lb zucchini, sliced 1/4 inch, and cook, stirring every 2-3 minutes, until tender and most of the slices are golden. Reduce heat; season with salt and pepper to taste. Sprinkle with 1/4 cup finely grated Parmesan cheese, cover and cook until the cheese is melted. Serves 2
