Asparagus Frittata

Ingredients
Cooking spray1/4 cup olive oil1/4 med onion, finely chopped1/2 lb asparagus, cut into 1" pieces2 tbsp cold water2 tsp orange zest4 eggs2 egg whitesSaltPepper
Directions
1. Preheat the oven to 350 F
2. Spray a 10" oven-proof skillet with cooking spray, heat for 30 sec over medium heat
3. Add the oil and heat again for 1 minute
4. Add the onion and asparagus, cook for 2 minutes stirring occasionally until asparagus is bright green
5. Meanwhile add eggs, egg whites, water and orange zest to a medium bowl, whisk until beaten.
6. Add egg mixture to skillet, cooking for 2-3 minutes, lifting the edges with a silicone spatula to let the egg and oil mixture run underneath and cook.
7. Next, put the skillet in the oven for 6 minutes, keep letting the egg and oil mixture run underneath
8. Cook until golden brown and puffy
