ED's Meatballs

Ingredients
1 Tbsp olive oil1 small onion, finely diced1 lbs. ground turkey1 1/2 cups cooked quinoa1/2 cup grated parmesan cheese1 large egg3 tbsp. fresh parsley leaves1 tsp salt3/4 tbsp black pepper3 tsp basil chopped
Directions
Serves 6

Preheat oven to 425 degrees

Heat olive oil and cook diced onions until soft about 10 minutes

In a large bowl, combine ground turkey, egg, quinoa, parmesan cheese, parsley, basil, salt and pepper, and cooled onions. Stir the mixture until smooth. Roll the mixture into 2 inch balls and set them on a foil lined baking sheet. Bake for 20 to 25 minutes.
