Ingredients
Egg substitute, liquid (Egg Beaters), 3 cup (remove)Peppers, sweet, red, raw, sliced, 1 cup (remove)Avocados, California (Haas), 1 fruit without skin and seeds (remove)Cheddar or Colby Cheese, Low Fat, 2 cup, shredded (remove)
Directions
Mix egg whites, vegetables, and cheese. Pour into muffin pans that you have sprayed with nonstick spray. Bake for 30 minutes at 350 degrees. Makes 36 muffins. Can be frozen and thawed and heated later.
