Rhubarb Ginger White Tea, Iced

8 stalks red rhubarb1 Tbsp crystalized ginger5 plain white tea bags5 pkts Truvia9-10 fresh mint leaves
Makes about 10, 8oz cups.
Clean and slice rhubarb lengthwise. Chop each into 3" pieces. To saucepot, add cold water, chopped rhubarb, and ginger. Bring to a boil. Cover, reduce heat to a simmer, and cook for 1 hour.
Remove from heat, allow to cool for 15-20 minutes. Strain tea using cheese cloth. Drop in tea bags, cover and allow to steep for 10-20 minutes. Pull tea bags and discard them. Stir in Truvia or other sweetner of choice and cool completely. Refrigerate over night.
Garnish with mint sprig.
