2 cans black beans, drained and rinsed2 cans diced tomatoes with green chiles, drained2 cans corn, frozen, or canned, if canned drained1 small onion, diced1 small green red, or yellow pepper, diced1 clove garlic, diced or mincedsalt and pepper to taste1 Tbsp cumin5-6 sprigs of cilantro, chopped fine
mix all ingredients together. can use as dip with chips, or as topping to tacos or fajitas...instead of guacamole and sour cream. May serve warm or cold.
