Whole Wheat Apple Banana Oatmeal Raisin Muffins

1 C. Whole Wheat Flour1 C. Rolled Oats1/2 tsp. Salt3 tsp. Nutmeg2 tsp. Cinnamon1 1/2 tsp. Stevia (Natural Sweetener)1 Egg3/4 C. Milk1/4 C Oil (or 1/4 C. Applesauce)1 Medium Apple Cored & Course Chopped3/4 C. Raisins
Using large muffin pans - makes 6.
To make the oats nice and moist, I soaked them in the 2% Milk for about an hour. No need to do it that long, I just got distracted. 10 min. should be enough.
Place the banana and apple in the food processor to chop to your desired taste.
This time I used one Stevia packet which is supposed to be equivalent to 2 tsp. of sugar, but for my sweet tooth, next time I will add two packets.
Chose to omit the oil and used the 1/4 C. of applesauce.
For my personal taste, I used 1/2 C. of raisins.
These will be a great grab & go for the morning.
