summer squash (shredded), carrots(shredded), cucumber(shredded), 2 lemons (lemon juice), Peanut Butter (3 tbs), Soy Sauce (2 tbs), Agave Nectar (2 tbs), scallions (chopped), minced garlic, finely grated ginger
Mix shredded squash, carrots, cucumber and chopped scallions. Mix juice of 2 lemons, 2 tbs of soy sauce, 2 tbs of agave nectar, 3 tbs of peanut butter, garlic, ginger, and if you desire, hot sauce in a bowl to make the sauce.
Toss the vegetables and the sauce together...here's your uncooked vegan pad thai!
