SCD Lentils and Spinach

Ingredients
1 tsp coconut oil1 small onion, chopped3 cloves garlic, chopped2 stalks celery, chopped2 carrots, chopped1/2 cup dry lentils, soaked (if you are on SCD) 2 cups water1 cup chopped frozen or fresh spinach
Directions
If you are on SCD,. pre-soak the lentils for at least an hour and discard the water. Heat coconut oil over medium heat. Add onion, garlic, carrots and celery and saute about 8 minutes until onion is translucent and veggies begin to soften. Add water, lentils and spinach. Stir to combine. Raise heat to high, bring to a boil, then lower heat and simmer for about 20 minutes or until lentils have absorbed water and are tender. Makes 2 1-cup servings.
