Zesty Rice and Corn (quick recipe!)

* *Brown Rice, medium grain, 2 cups * *Corn w/ Red & Green Peppers 11 oz * Lime Juice, 1 lime * Fresh Chives, 1 tbsp chopped
(1) Cook brown rice as per package instructions.
(2) Drain rice if there is any water left. Add corn with red/green peppers. (I use vacuum packed, so there is no need to drain.)
(3) Squeeze juice of one lime right into the rice and corn mixture. Warm up over low heat for a few minutes, allowing the corn to heat thoroughly and lime juice to soak into the rice.
(4) Top with chives and serve hot!
Makes about 4 servings.
