Coconut-Lime Chicken Soup

Ingredients
2 chicken breasts4 cups chicken broth2 sliced medium carrots1/4 cup lime juice14oz. coconut milk4 Tbs soy sauce3 garlic cloves1/4 tsp curry powdersalt & pepper1 tsp. sugar8 oz. rice noodles1 tomato, chopped1 bunch fresh cilantro
Directions
Sear chicken breasts in olive oil. Add garlic and cook for 1 minute. Add chicken broth, carrots, coconut milk, soy sauce, lime juice, and seasonings. Bring to a boil, then simmer on low heat for 10 minutes or until carrots are tender. Add noodles; cook for 5 minutes. Add tomatoes and cilantro; remove from heat. Garnish with fresh cilantro. Makes 6 1-cup servings.
