Spinach, Tomatoes and Rice

Ingredients
● 1 1/2 cups onions, chopped ● 1 Tb garlic, minced ● 1/3 cup bell pepper, chopped ● 1 Tb olive oil ● 2 Tb corn oil ● 2 cups spinach ● 4 cups tomatoes, chopped ● 2 cups rice, uncooked ● 4 cups water ● 3/4 cup tomato paste ● 2 tsp sea salt
Directions
Note: I used long-grain brown rice in the recipe, and it made 8 1-cup servings. With brown rice, 1 cup is insanely filling. As you can see from the picture, I used red bell peppers, but you can use green for better contrast. Also, I would add more spinach next time--this was a tiny amount in the finished product. Very tasty and very low-cal. This would be a good side dish to a Mexican meal.


Saute the onions, garlic, and bell pepper in the oils. Add the remaining ingredients and simmer till cooked and of the proper consistency.
