1 cup uncooked yellow cornmeal1 cup all purpose white flour1tsp baking powder3/4/tsp salt1/2 tsp baking soda14 3/4 oz (1can) creamstyle corn1/2 cup buttermilk2 large egg whites2 tsp corn oil
Preheat oven to 400
coat an 8 inch square cake pan with cooking spray.
Combine cornmeal, flour,baking powder salt and baking soda in a large bowl. Mix well with a fork and make a large well in the center. Set aside.
Combine creamed corn, buttermilk, egg whites, and oil in a medium bol, mix until blended. Fold ingredients into dry ingredients.mix well. Pour into cake pan and smooth the top.
Bake at 400 approximately 20 minutes or until a toothpick inserted in the center comes out clean.
Let cool on rack for 10 minutes. Remove from pan and let cool completely before cutting into 8 swuares.
