Roasted Potato and Bacon Salad

2 lbs. red potatoes6-8 slices of pre-cooked bacon1 cup sweet onion, chopped1 tbsp. Olive Oil1/2 cup Monterey Jack Cheese, shredded1/2 cup each regular mayo and sour cream1/3 cup French Vinaigrette
Pre-heat oven to 425.
Chop bacon. Wash potatoes and cut into 1/2 in. dice. Toss potatoes, bacon, onion and oil in a microwave safe bowl. Cover the bowl with plastic wrap and fold back one corner. Microwave on high for 7 to 10 minutes or until potatoes begin to cook and sizzle.
Remove potato mixture and season with salt and black pepper.
Transfer to a baking sheet. Bake for 20 minutes or to desired doneness.
Combine mayonnaise, sour cream and vinaigrette. When pototes have cooled slightly, transfer to serving bowl and toss with drssing mixture and shredded cheese.
Serve warm.
