Yummy Eggs

Ingredients
1/2 c Egg Whites1 Green Onion Sliced1 clove garlic (pressed)1/4 c Green Bell Pepper Chopped1/4 c Tomato Choppedomato1/8 c Feta Cheese2-3 Fresh Mushrooms Sliced
Directions
Throw all ingredients in a microwave safe bowl and cook in microwave for 1-2 minutes. Low calorie, low fat, and high protein breakfast! Makes 1 big serving. if this is too much reduce the egg to 1/4 cup.
I have also experimented with adding black beans and other vegetables that I might have on hand. Possibilities are endless!

    I don't like eggs but really enjoy this recipe! It definitely doesn't taste low in calories and it is so easily modifiable to the tastes you like. I've taken to pepperjack cheese and a couple slices of budding ham in it. Talk about a protein kick! - 4/28/10
