Barcelona Hot Chocolate

Ingredients
2/3 cup boiling water2 oz good-quality dark or bittersweets chocolate (60-70%), chopped1 1/3 cups 1% milk1 cup brewed espresso or strong coffee¼ cup unsweetened cocoa powder¼ cup brown sugar 1 2” piece of orange rind¼ cup fat-free frozen whipped topping, thawedCocoa powder, optional
Directions
1. Combine water and finely chopped chocolate in medium saucepan, stirring until chocolate melts. Add milk and next 4 ingredients; cook over medium-low heat, stirring with whisk. Heat 5 min or until tiny bubbles form around edge of pan, stirring frequently, do not boil
2. Discard rind. Pour 1 cup mixture into 4 mugs. Spoon 1 T whipped topping and dust with cocoa powder.
