B's Reduced Fat Baked Ziti

1 lb. ground turkey16 oz. light sour cream1 jar of bottled marinara of choice8 oz. ziti pasta5-6 slices of provolone cheeseReduced fat 4 cheese Italian blendGrated Parmesan cheese to taste1 grated or chopped zuchini1 grated or chopped medium yellow squash
Makes up to 8 servings
Brown the turkey in either non stick spray or enough olive oil to coat the bottom of the pan (use a large deep pan). While turkey is browning, grate zuchini and squash. Boil water for the pasta. Add to the turkey the grated zuchini and squash and cook until incorporated (a few minutes). Add a jar of prepared marina sauce of choice to the turkey and veggies - may need to add some water if the sauce seems too thick. Bring meat sauce to medium heat until bubbling and then reduce heat and simmer for 15-20 minutes. Meanwhile boil pasta until al dente and strain and wash with cold water to prevent further cooking. Spray deep casserole dish with nonstick spray and layer half the pasta in the bottom of the dish. Top with half the meat sauce. Layer the provolone slices on top of the meat sauce and then spread the sour cream on top of the cheese. Top the sour cream with the rest of the pasta and top with the remaining meat sauce. Sprinkle the Italian cheese blend on top and sprinkle grated parmesan cheese to taste. Cover with aluminum foil and bake at 375 degrees for 30-45 minutes or until heated through. Remove foil and bake for another 15 minutes or until cheese is bubbly. Can be frozen for up to 1 month if wrapped tightly.
