Whole Wheat Honey Banana Applesauce Muffins

Ingredients
3 1/2 cups Whole Wheat flour2 tsp baking soda1 tsp salt2 Tbs wheat germ (optional)2/3 cup applesauce1 cup honey4 eggs2 cups mashed ripe bananas (I just used up 3 bananas I had)1/2 cup hot water
Directions
Makes 65 mini muffins or 24 regular sized muffins.

1. Stir together dry ingredients.

2. Beat applesauce and honey together; add eggs and beat well.

3. Add bananas and beat to combine.

4. Add dry ingredients to wet, alternating with hot water; mix well after each addition.

5. Spoon batter into 12 greased mini muffin cups(or regular sized). If desired drizzle with honey; bake at 325 degrees for 15-17 minutes, or until muffins are golden brown and test done.

6. Remove from oven and cool on rack.

    Used 1/2 c honey + 1/2 c brown sugar and added a few walnuts. I like that the recipe doesn't use any oil and uses all whole wheat flour. I needed to use up some over ripe bananas too. - 7/21/15
