Brown rice Mushroom burgers

Ingredients
2T olive oil (save 1.5 of it for frying)1 med onion diced fine1 clove garlic minced1 C chopped mushrooms(fresh)1/4 C finely chopped bell pepper1/2 C chpped celery stalks with leaves2 C cooked brown rice (cold)1 egg1 egg white1/2 t each salt free seasoning(like Mrs. Dash), dried rosemary, and basil1/4 t paprika1/2 C seasoned bread crumbs
Directions
Ina non-stick skillet sautee the veggies and garlic til tender. Add seasonings cook a few min longer. Allow to cool slightly, miw with cold rice, eggs and bread crumbs. With a hand blender blend lightly (should not be smooth). Form into patties fry in 1.5 T olive oil til done and golden brown (about 3 min per side)

Makes 6 hamburger bun sized patties.
