Not Your Grandmother's Waldorf Salad

Ingredients
2 cups of red leaf lettuce, torn into bite-sized pieces1 medium Granny Smith apple1/2 cup sliced seedless grapes1/4 cup sliced dry-roasted, unsalted almonds1 small stalk of celery, cleaned and thinly sliced1 tablespoon lemon juice1 6-ounce container of fat-free lemon chiffon yogurt1/8 teaspoon grated fresh ginger root (or 1/4 tsp. dry ginger)
Directions
Place lettuce in a large bowl and set aside. Wash, core, and slice apple, leaving skin intact. Toss apple slices with lemon juice in a small bowl and set aside. Prepare dressing by stirring together grated fresh ginger root and lemon yogurt, adding a splash of lemon juice, if needed for proper consistency.

Toss lettuce with lemon yogurt dressing until the leaves are well-coated. Add apple slicles, sliced grapes, sliced almonds and sliced celery and toss lightly to combine.

Makes 2 servings.
