Artichoke Sandwiches with Pesto Dijon Dressing

DRESSING1 cup fresh basil1/3 cup olive oil or salad oil2 tablespoons grated Parmesan cheese1 tablespoon capers, drained1 tablespoon white wine vinegar2 teaspoons Dijon-style mustard1 clove garlic, quarteredTOPPINGS1 14-ounce can artichoke hearts, drained and chopped4 slices fresh mozzarella cheese1 medium tomato, thinly sliced2 cups torn fresh spinach8 slices whole wheat bread
1. In blender or food processor combine all DRESSING ingredients until smooth.
2. Spread dressing on each slice of bread (1/4 of the dressing per sandwich).
3. Layer the mozzarella, tomatoes, artichokes, and spinach on the "bottom" pieces of bread (1/4 of each per slice of bread).
4. Add the "top" pieces of bread to complete the sandwiches. Serve and enjoy!
Makes 4 sandwiches (1 sandwich per serving).
NOTE ~ I often prepare the dressing and cut the veggies and cheese, then store them in containers in the fridge. I then prepare a fresh sandwich when I want one. All ingredients will store well for a few days.
