Lara's Eggless Egg Salad

1 pkg. Mori-Nu Organic Silken Firm tofu3 tbsp. Vegenaise1/4 tsp. honey1/4 tsp. salt1/4 tsp. tumeric1/8 tsp. dry mustard2 tbsp. minced scallions2 tbsp. minced celeryfreshly-ground black pepper
Drain the tofu in the colander while preparing the following:
Into a small bowl place the dry ingredients. Add the honey and Vegenaise. Whisk together well. Add the celery and scallions. Pat the tofu dry with a towel and crumble it into the bowl. Stir thoroughly and refrigerate, covered, for at least 30 minutes.
Makes enough for three yummy sandwiches. I like to add big, crisp romaine leaves when I build these.
