1 15 oz can bb, drained and rinsed2 cups Trader Joe's roasted corn kernels1 avocado, cut into 1/2 inch pieces1/2 pint cherry tomatoes, cut in half1/4 cup chopped red onion1/2 cup Trader Joe's Cilantro Salad Dressing
makes 5 1/2 cup servings
Combine beans, corn, avocado, tomatoes, onion and dressing. Toss gently and top with cilantro if desired.
Serving suggestion: add grilled chicken and quesadilla wedges for extra protein and flavor.
