Mom's Potato Salad

4 medium red potatoes1 cup diced celery1/2 cup diced sweet gherkins6 slices Oscar Meyer fully cooked bacon4 hard boiled eggs1 1/5 tbsp minced onion, rehydrated1/2 cup Miracle Whip Light3 tbsp Guilden's Spicy Brown MustardSalt and Pepper to taste
Boil red potatoes with skin on for one half hour. Drain, slice in half lengthwise and set aside to cool. While potatoes are cooking dice celery, sweet gherkins, and eggs. Cook bacon according to directions on package. Crumble bacon and add to other ingredients. After adding rehydrated minced onion, add salt and pepper to taste. Once potatoes are cool, dice and add to other ingredients. Add Miracle Whip and Mustard and mix well. Chill and enjoy!
