Ingredients
1 onion grated1 small carrot grated2 ribs celery grated2 cloves garlic minced1/2 cupwarm milk1/2 cup bread crumbs1.5 lbs. lean/extra lean ground beef2 eggs1 tsp. salt4 tsp. tobasco sauce\4 tsp. Worchestshire sauce2/3 cup ketchup1/4 cup brown sugar2 tsp. dijon mustard
Directions
Makes 24 cupcakes
Warm milk, then add bread crumbs. Set aside. Grate and mince vegetables. Add to beef. Add milk/bread crumbs. Mix all ingredients into beef and mix well. Spoon into cupcake tins that have been lightly sprayed with Pam. Mix ketchup, sugar and mustard. Coat tops of each meatball. Bake in 375 degree oven for 25 minutes or until well done.

    These are DELICIOUS!!! I subbed in 1/2 ground buffalo with the beef and made them "beefalo" meatloaves to make them under 100 calories each and they are SO good! - 8/2/10

    These are good. I prefer them without the tabasco sauce and with more carrot and no celery. I made mini meatloaves instead of meatballs and doubled the serving size. Still low in calories, increase in veggies and yummy! - 9/19/10
