Crock Pot Lemon Chicken

Ingredients
1.5 lbs. boneless chicken-- cut into chunks1/4 c. flour to toss1 TB kosher salt6 oz lemonade concentrate, thawed3 TB grown sugar1 TB balsamic vinegar3 TB ketchup (w/o HFCS, preferred)1 bag frozen stir-fry style vegetables
Directions
Dredge chicken in flour and cook in a pan coated w/ cooking spray until browned.

Add to crock pot with remaining ingredients (not including vegetables) and cook on low for 6 hours or high 3-4 hours. 30 min prior to serving toss in frozen vegetables until warmed, but still crispy.

Alternately-- do the whole thing on the stove top. Let simmer for 30-45 min on low, covered, after chicken is brown and before adding the vegetables.
