Crustless Quiche with Turkey Bacon, Onion, Broccoli and Mushroom

1 Tbsp butter1 medium onion, diced4 slices turkey bacon, chopped into small pieces2 cups cooked broccoli, chopped into smaller but not tiny pieces, drained1 cup mushrooms, diced4 large eggs1/2 cup part skim ricotta1/2 tsp salt1/2 tsp pepper1/2 tsp nutmeg, ground2 cups 2% reduced fat cheddar jack cheese, shredded
Preheat oven to 350. Melt butter in a frying pan (nonstick) and saute onion and bacon until golden brown. Add broccoli and mushrooms and continue to fry. Set aside to cool.
Beat eggs, ricotta, salt, pepper and nutmeg in a bowl. Fold in cheddar jack and mix, then fold in cooled veggies and mix. Spray 9 inch pan with nonstick cooking spray or rub with a little extra butter. Pour filling into pan and bake for 45 minutes until knife comes out clean from center. Cut into 8 pieces and enjoy!
